Finely chop the onion and garlic. Have all of your ingredients ready before you start cooking.
Heat the olive oil in a large pan over a medium heat. Add the onion and cook until softened. Add the garlic and cook for another minute.
Add the beef mince to the pan and cook until thoroughly browned, breaking it apart as it cooks.
Stir in the tomato purée, followed by the chopped tomatoes and oregano. Season with salt and pepper.
Reduce the heat and allow the sauce to simmer. Stir occasionally and allow the flavours to develop.
Cook the spaghetti according to the instructions on the packet until al dente. Drain once cooked.
Serve the spaghetti with a generous portion of the bolognese sauce. Finish with Parmesan if desired.
Giving the onions plenty of time to soften helps build the flavour of the sauce.
If you have the time, allowing the sauce to simmer for longer can give it a richer flavour.
Adjust the seasoning throughout the cooking process rather than adding everything at once.
